Naked Strawberry Banana Pie
Its, springtime and the strawberries are on! This delicious strawberry, banana pie will have you coming back for more! It's pecan crust adds the perfect crunch to the mixture of organic strawberries and bananas and oh by the way I was going to add apple juice to make the sauce, but I didn't have any, so I grabbed a Naked Juice from the fridge and Wow, the taste of the pie was mouth watering!

  1. Combine the pecans, oat flour, coconut palm sugar, sea salt, and coconut oil in a bowl. When combined press into a 9 inch pie pan and bake at 350F for 15 minutes until golden brown. Let cool.
  2. While the crust is cooking, mix together the 4 cups sliced strawberries, sliced banana, and the honey and set aside.
  3. Puree the remaining strawberries in a blender with the Naked. Then pour this into a medium sized sauce pan and bring to a boil. While boiling mix the water and arrowroot starch. Slowly add this mixture to the boiling pureed strawberries. When thickened set aside to cool.
  4. When the mixture has cooled stir in the strawberry, banana and honey mixture. Pour over the cooled crust and chill for 45 minutes. NOTE: Be careful when adding the strawberries that you don't add the juice from them to the thickened strawberry mixture or it will become liquid again and won't set up.
